So y’all know my NOquick recipe from a while back? Here’s another way you can use that recipe to make this delicious blueberry cobbler! It’s no-chem, fast, and tastes just as good as my granma’s recipe. And you can make it all from scratch. It’s adapted from this great recipe from Inspired Craft Ideas, but uses none of the chemical bomb that is Bisquick.
- 3 cups fresh organic blueberries
- NOquick pancake batter
- 1/2 cup raw sugar (you can sub in a quarter cup of stevia)
- 6 tablespoons butter
Preheat oven to 350 F (180 C). Wash blueberries well. While they drain, mix up one batch of NOquick pancake batter and add raw sugar. Melt butter and pour into a 9×13-inch rectangular casserole pan, then pour in the NOquick and sprinkle the blueberries on top. Bake it for 42 to 47 minutes in preheated oven until the crust is golden brown.
It’s that easy and it’s SO GOOD. It’s great for last-minute potluck and party desserts, and it’s sure to be a crowd-pleaser! It always seems to disappear when I make it. XD
